I can see this coming to PC in a year or two if it doesn't do well. Perhaps some clause in the contract or the Nintendo funding was a bit of a punt and wasn't so locked down like Nintendo have done in the past.

I highly doubt it. It's not happening with Platinum's other game on Wii U and it won't happen for this. It's not like Bayo done amazing on other platforms before anyway, Platinum games don't sell.
