It is very easy. You turn on the PS3, start Gran Turismo and after the initial loading screen a little window pops up asking if you want to initiate multi-monitor mode. You click "yes".......and that's it! Once you get on track the screen loads up and you're enjoying virtual driving nirvana. đź‘Ť

As yet, I only have one PS3 (waiting for GT6 triple screen support), so I told it to be a client just to see what would happen. I saw exactly the behavior you describe, without the actual connection to the host of course. So clicked "no" :D.
 
It's that easy, and when you're done you just shut the PS3 off. Getting the viewing angles and screens lined up is a bit of a process but you only have to do that once. I'm anxiously awaiting GT6 support.

Top Tip: For the clients, get the digital copy from PSN. You pay once but can install it on two machines. đź‘Ť
