Driving aids should be similar to the actual car.

I agree, but customization is mandatory IMO. I say, you can drive with all actual aids on if you want it, on any car (because the player have to enjoy the game as he/she wants), but if you want to turn aids off, the game only allows you to turn them off to the degree allowed by the real car. I.E., you can't turn ABS OFF on the majority of actual road cars, and permanent ESP OFF on cars which in real life allows it.

For this to work, aids must be modeled almost as real as the real car. Of course, race cars (or modified cars) have all aids turned off by default, or you can buy a part to disable/enable certain real car aid.

Even the game can have a "switch off all aids" sort of preset which enable/disable aids in order to drive the car exactly as it is in its real life counterpart.

Even further, you can switch ESP on/off, normal/sport/race modes, while driving, exactly as a lot of modern cars allows to the driver IRL.
 
It was like that in GT2 (sort of), you could buy Traction control (or YAW on Lancers) and 2 other i cant remember now (i think one of them was something like ESP).
Anyway, Assetto Corsa has this option now too. You can use only aids installed on the real car or use any you like (theres no money in the game) or have nothing.
