Downloaded the Ultimate Car list, and there seem to be a couple of cars I have that are missing from the list. I'm sure they go by another name, but any help identifying would be great.

Mitsubishi 3000GT
Mazda MX-5 Miata
Mazda MX-5 Miata 1.8 RS

And as long as I have your attention :) Won the BL Vitz Series, but the four prize cars are dark; is it just chance? Pick one? The first two times I didn't do anything and won the light blue each time.

As far as the cars being dark goes, they are all that way for the series races, it is chance which one you get, a good tip is to save the game before the last race and if you don't win the car you want, just reload and race the last race again.

um... Vitz series? don't you get vitz if you win? i got a pink one.. i think.
save on the last race of the series and use the "reset" trick. keep doing it until you get what you want...
pressing "X" button when the circle comes to the car you want is just BULL****. some rumors...

It is just chance. Fact.

The three cars you name do have alternate names depending on the region:

Mitsubishi 3000GT (PAL)/Mitsubishi GTO (NTSC)
Mazda MX-5 Miata (NTSC/US)/Mazda MX-5 (PAL)/Mazda Eunos Roadster (NTSC/Japanese)

I'm unaware of the 3000GT being offered as a prize car in ANY series. THe MX-5 comes in four variants - the 1989 shape (pop-up headlights) 1.6, the 1989 shape 1.8, the 1998 shape (normal headlights) 1.8i (in the PAL zone - also called the 1.8RS in NTSC) and the 1998 shape 1.8 RS (in the PAL zone - also called the 1.8 LS in NTSC).

Check the prize car lists in the LOOK HERE BEFORE YOU ASK thread above.
