I'm not gonna actually answer the questions but the build looks fine. The 7850 is an excellent card for triple screens, I suggest you get a hyper 212+ (about 30$) so you can overclock your i5-2500k.

iRacing depends heavily on CPU, almost as much as it depends on GPU. With that setup you'll be CPU bottlenecked. I'd recommend a mid to high range i7, also invest in an aftermarket heatsink (nothing too fancy) to have the possibility of overclocking in the future.
