I think you're confusing some things...
I try to explain.
Your Thrustmaster Ferrari GT Experience (from now on TFGTE) wheel has a 90° lock.
A G27 has a 270° lock.
That does not mean that you can steer sharper with a G27. You cannot steer an 'extra' 180 ° with a more expensive wheel.
See it this way: (example)
The wheels of your car steer about 45 degrees MAX.
Your TFGTE wheel divides those 45 degrees in 90 segments.
The G27 wheel divides those 45 degrees in 270 segments.
But still, if you turn your wheel to it's max, the wheels of the car have a 45 degree angle at most.
Same if you turn that G27 wheel all the way round and round to it's max, the wheels of the car have a 45 degree angle.
Same for your controller. If you turn that nipple all the way to the left, your wheels will make a maximum of 45 degrees to the left.
The only thing is: the more degrees your wheel can turn, the more accurate it is when turning it a little. Because on the G27 wheel those 45 degrees are divided in 270 segments, on your TFGTE wheel it;s divided in 90 segments, and on the DS3 controller it;s divided in eehh.. 20 (?) segments. (I dunno how accurate the DS3 controller is)..
My suggestion: use your TFGTE wheel, it should be better than a DS3 controller.
And then in a few years or if you can affort it and want to, you could think about upgrading it to a more expensive wheel
