When you're at the menu where you're sharing your replay, where you also would title it and maybe offer some tags, you would also be able to tick a box for each of these options: the option to share your telemetry data, and the option to share your car's settings. If you want to leave them undisclosed, you'd simply leave these boxes unticked.
However, I'm unsure how this hypothetical feature would gel with the potential replay editor that seems like it'd be coming to the series (either in GTS or GT7). Maybe, when you share your replay, you can share it the way many players do now, in that you download it and can go through the video manually, and view each car as you like. But you could also take it into the editor, and when you're done editing, you can share it as a separate type of replay, where viewers would not be able to go through it manually. These replays would also have the ability to be directly exported to Twitch and/or YouTube, whereas the "typical" replay cannot be directly uploaded, AFAIK.
