You could save a replay of any race in which this issue arises and share it through the Showcase in the game. Make sure it's set as "Open to All" and you apply some search tags so it can be found. Alternatively go to your GT profile on the game's website, gran-turismo.com (you will need to log in to your account and select "GT7 MyPage"), and copy the link to the replay which will allow players to add it to their collections to view in-game:
Alternatively, you could record the gameplay using the console's inbuilt Share (PS4) or Create (PS5) features. That's pretty easy but you would need to upload the video to a video-sharing site like Youtube.
Here's the PS4 manual for Share. PS5 is the same but the button is called Create now: https://manuals.playstation.net/document/en/ps4/share/about_share.html

And that relates to "shortly after the race begins" how? Running out of fuel is just one possible answer, but it requires several different additional factors and more information - which the user hasn't provided yet, so jumping to conclusions assists nobody.

Op it be alot more useful if you told us what kind of race it was. Sport mode, Custom race, World Circuits?

Just tried a custom race with fuel usage at X50 and it doesn't make 1 lap but you can still coast at around 50 mph.

So I recreated your video same assist same setup and it didn't happen in my game.

You can always just try another car for that event. 
But if you really wanna use that Audi you may need to reinstall your game and see if that fixes the problem.
