Well, even though you're asking a subjective question, it might be better to start off by listing which categories you want. Something like:
  • LMPs
  • Group C
  • Super GT
  • Rally
  • Tuner
  • DTM
  • Muscle Cars
  • Concepts Road/Race
  • Et cetera
You get the point. The things to remember are that there are so many different categories of cars in GT5. American cars, European, etc. and also enough of certain cars to deem themselves their own category (Miatas, Lancers, Skylines, Imprezas, and so on). Anyways, you should set out some guidelines to help us give you the answers you're looking for.
 
  • LMP: Audi R8 (01)
  • Group C: Sauber Mercedes
  • Super GT: Calsonic GTR
  • Rally: Evo Super Rally

Of course I'm awful biased towards vintage cars, considering I race a Triumph myself, but I have been able to beat most of the game with just the Cobra and Ferrari.
