I have to say, even though I haven't driven all of the tracks yet and all of their variations, there are some really spectacular ones out there that just blew me away! I can't wait to see what the Nurb and some of the rally courses look like.

As of right now, these would be my top 3 on look and atmosphere alone:

1. Madrid
2. Tokyo R246
3. Cote de Azur

Honorable Mention - Rome
 
Some of the Textures on Cote D'Azure feel flat and boring.

I don't really care for any of the tracks other than the Eiger Norwand K Trail, it looks so beautiful while you are going down.

I was really hoping for El Capitan as one of the tracks, i really liked the scenery of that track and was really refreshing compared to the cityscapes and such.
 
Eiger Norwand K Trail is by far the most visually satisfying in my mind. And yes, the Nurb looks great too when you're flying by.:)
 
The city courses are very impressive. I also like the aerial view from replays of cars taking Cape Ring's F-Zero Corkscrew at speed.
 
-Special Stage Route 7 in the rain looks impossibly good
-Eiger K
-Clubman Stage Route 5
-Cape Ring (not sure which, but one variation in particular looks really nice)
-Toscana
-London
