Today I found out that even with the steering setting set to "Professional", it looks like GT5 still applies some kind of steering assist with my wheel (an old 200 degrees GT Force wheel, the PC version which should be exactly the same as the PS2 one).
At low speeds and the wheel at full lock (100 degrees to either sides in my case), the car's wheels appear at full lock too.
However, as speed increases, even though the wheel controller is still at full lock, the car's front wheels angle visibly decreases.
This is most evident when hitting something with the wheel at full lock. Upon impact, the car's front wheels angle suddenly increases.
My conclusion is that with old wheels there is still some kind of assist applied, regardless of the assist setting in the option menu. It makes sense after all, since 200 degrees would be twitchy with fast cars (in GT Academy 2009 this was the case with my wheel).
It's possible that this happens with unsupported wheels like the Logitech G25/G27 and Fanatec wheels too.
If it does, then until full support is achieved these wheels are kind of crippled in functionality (since other settings such as feedback strenght and the "power assist" don't work either).
