I think it would be a great idea to actually have real world turbo applications. Such as a 65 series, which would spool only at high end, but make way better horsepower, or a standard T3/T4 hybrid that would be able to spool quickly, and give you plenty of low end, while not taking away too much of the high end, but stilll leaving you behind when the bigger turbo hit boost. Not many games have ever really given you the option of different turbo sizes, and I think Gran Turismo should be one of the first given its way of breaking out new things.

Who knows, maybe we'll be racing a T65 supra vs. a nice single turbo skyline in the future ><

You have a good point here. I personally think the adding of various turbo's would bring too much variables into the game. There are different tuning centers for your cars however, so we might see some different options.
Turbo lag is a main variable in this (dependant on boost, size of turbo, and such), and in real life a lot of things are done to eliminate this. The idea of the different (size) turbos is nice, but this would have to bring along a lot more. Systems like backfiring seen in the rally world for example.
As we haven't seen anything that indicates the given yet, speculating about it is hard.
