For some championships, you have the option to run the series, or run individually. Id like to do the series in a straight sit down with the game, but sometimes I just get borred of doing a series or got to do something else.

Any benefit to running the series? or is the prize lay out still the same regardless if you just run the races individually?

You get a trophy for doing it through the Champ option.
I did the first one twice, because after I did the 3 races I saw the Champ icon did not turn to Gold.

You have to run the championship to get the prize car, you can't do them individually.

and at the end you get extra price money

This. The first time you do it for the prize car but after that I believe you still get the prize money for winning.

It is true you have to chose the icon before the races for the championship and it's winnings.

You can go back to them too and I always thought it was so if you did not gold them all during the championship you could go back after and gold them.
You never know when someone turns you late in a championship run on the last of 5 track event.

You could retire from the championship but think of the lost progress.

Is it possible to race the championship again like in gt4 for another car or are you stuck with the first prize car and can't win any more?

You can only win prize cars once in this game. And either way, you can't sell many of the prize cars anyway, sadly.

When you do the championship you get the same prize money for each race as you would doing them separately. But you also get a large bonus for winning the championship. You can easily win a championship without all golds (it's based on points earned throughout). So if you don't gold all the races you can go back and individually win the ones you didn't win when you ran the championship.

and at the end you get extra price money
No kidding, the reward for the NASCAR championship is somewhere in the area of 250,000 credits, and that's not counting the credits for each individual race.
