A Norwegian guy named Per Kleinschmidt has developed a very impressive DIY load-cell brake kit for the Logitech G pedals (specifically for the G29, but I can't see why it shouldn't work with the others)
Dead-zones, gamma curve (i.e. linearity) and maximum braking pressure can be configured on a smart phone (via Bluetooth)
The load-cell is controlled by an Arduino fitted with the ESP32 BLE module.
Caveat: It's probably not a project for electronics novices.
