Just a guess but probably because it saves them from modeling the interior of the car and showing the driver.

There are convertibles in GT5 that actually run as convertibles. To me it looks silly though having a driver in a serious race driving with the top down.

I think it is, as Caterhams have a removable soft top. The Tank Car on the other hand is always an open car.
