Just wondering if anyone else has had this problem with GT5 alone? All my other games and blu-rays work fine - do I just need a new copy already?

If yours is a phat ps3 they are having disc read errors , i had one do it,it would freeze alot , only with GT5 nothing else, all other games read fine and play all day .. I bought a slim and no problem whatsoever , no freezing or disc read errors.

It is a slim, less than a year old. The disk does have a faint circular mark - as if the laser has worn a path into it...

That isn't good. The Blu-ray player has probably done that to the disc. I would get Sony to check that out and repair your PS3/replace your copy of GT5 if needed.

Update for anyone with the same problem; called the uk customer service and, after trying a couple of things they suggested, got a brand new PS3 - THE NEXT DAY! Absolute top marks to sony!
