I have more control of the car that way I think. If the car understeers when braking into a corner I can instantly cancel the understeer with gas, and I have more control on the car's speed while in mid corner instantly, without losing those miliseconds that take to travel from gas to brake with the right foot (watch Karrousel corner). Or simply to insta cancel micro skidding caused by braking.

Other than that I don't know, I got used to drive that way. Blame me crazy feet

It's slighlty quicker and like OP said you can cancel understeer, you can also cancel braking oversteer with slight gas when braking in GT5.

"Man-handled" is more of a USA statement and it probably came from the South for when we man-handle our women! Hahaha! Anyway, that was some great driving and footwork. Keep up the videos in the premium vehicles.

May I suggest the McLaren F1? I don't know what tires you use, but make sure you don't use nothing better than Sports Hard or you'll spoil the fun.

I get kind of depressed watching videos like these...they remind me that I'm just not that great at the game. I would watch vitg's videos of our GT Union tournaments and try to emulate, but could just never keep the car under the same tight control.

Don't give up
That's what I thought too at first. But I've noticed that after a while I got a lot better at it. Nowhere near as good as Dark Ruffo (but I don't have his fancy shoes either). Still , my handling of the cars is now much better than it was 6 months ago, let alone 2 years ago.
Another thing I did - and which greatly improved both my performance and the fun I had- is to stop seeing it as a game, but simply react the same way I would when driving a real car. This shift in thinking made a huge difference. Sure, driving a car in GT5 is different than driving in real life. But your mind can very well handle those differences and GT5 cars can react remarkably close to real thing.

Playseat? No playseat for me. Regular PC table + 24" 1080p screen + regular PC chair + G25.

The shoes are very old, 2006/2007 but I never use them for anything but driving in GT, but most of the times I play barefooted, so they are in mint condition. I think they're discontinued.

The model is called Adidas Good Year Race or something, really confortable and sensitive to the pedals (thin, very thin outsole).

As the model name implies, they resemble racing shoes a lot.

Going further off-topic, so I apologize.

I've been playing GT for 13 years and with a wheel for a decade, so I'm pretty sure any room for improvement is minimal.

I take that back, it's likely non-existent, and holding on to what skill I have should be the goal. Back when I was a teenager in the early to mid 90s, I was actually a pretty damn good game player*. But as I've gotten older, I've gotten much worse as games that use to be a cake-walk, like Donkey Kong Country, now seem brutally difficult.
