Choose a racing category (F1, Indycar, Btcc) and choose your fantasy season.
Stick to the geographical area stated in the title (e.g. British Touring Car Championship stays in Britain, American Le Mans series stays in America [North/South])
Ignore FIA grades and Noise regulations and other setbacks and have an F1 race at Castle Combe for example.
All tracks must exist/have existed and it is possible to race there now. (You cant host a race at Westwood in Canada as it is now a housing estae for example.)

The obvious choices are those that travel globally then, as National championships (in general) visit the best / most well known tracks of that country.

At the simulator centre I work in and visit regularly, I have a current obsession with driving a Formula Renault equivalent around the Macau track, and therefore I am to create the Formula Renault 2.0 World Series (See what I did there!). I am a big fan of any open wheel racing and especially so when all competing with the same cars too.

Kuala Lumpur, Malaysia
Bathurst, Australia
Laguna Seca, USA
Indianapolis, USA
Brands Hatch GP, UK
Jarama, Spain
Nurburgring, Germany
Monza, Italy
Brno, Czech Republic
Kyalami, South Africa
Marina Bay, Singapore
Dubai Autodrome, Dubai
Macau, China

Brands Hatch is my local track, so although Silverstone may be a more obvious choice for most, I'm satisfying my own tastes here :)
Could do with some tweaking I am sure, I have made sure to make the choices make sense logictically as well whilst ensuring Macau is the season finale. With Indianapolis, I would prefer the GP layout... However the thought of a completely different style for just 1 race using the oval layout? hmmm.....

F1

Macau - Guia

Optimistic at best, but it would be awesome if you could find a way of shortening the cars or widening the track slightly....

Somewhere in deepest Woking, a young Formula 1 world champion is smiling intensely at the prospect....

I decided to tackle the NASCAR schedule, I figured I would keep it at 36 races. I also tried having it make sense logistically.

1: Daytona 500
2: Atlanta
3: Homestead-Miami
4: Darlington
5: Road Atlanta
6: Bristol
7: Watkins Glen
8: Dover
9: Pocono
10: Montreal
11: New Hampshire
12: Martinsville
13: Charlotte
14: Richmond
15: Kansas
16: Road America
17: Michigan
18: Mid Ohio
19: Indianapolis
20: Phoenix
21: Laguna Seca
22: Auto Club (California Speedway)
23: Texas
24: Infineon
25: Las Vegas
26: Kentucky
27: Chicagoland
28: Daytona Road Course
29: Charlotte
30: Bristol
31: Barber Motorsports Park
32: Dover
33: Lime Rock
34: Talladega
35: Sebring
36: Las Vegas

I realize it's still mostly ovals, but 11 road courses is still a solid chunk of the schedule.
