When racing, the spare tire is visible, appears to be a treaded Sport tire of some sort, even if the car is equipped with smooth racing rubber all round.

However, in the Home View mode, with the car traveling on streets, the spare tire is absent, as you can see in my video below. Edit: fast forward to about 2:20

Does this make sense? I think I'd take the spare out when racing, but keep it on board when driving on the road.

It does make sense. The tyre is there in case you get a puncture and can't make it back to the pit. On a normal road you can just call a tow truck if needed.

Since there are no punctures in GT Sport they could - in theory - remove it when racing. But it would be less authentic then as it raced with the spare wheel in real life.

In a future game it would be nice to have it as a weight reduction option though.

I wondered what the shadows would look like if the tire wasn't there in races. Seeing a static area on a moving car would look rubbish.

Edit : oh just watched the 2:20, can't really see much in there anyway, certainly nothing moving.

Cars at Le Mans in that era were required in the regulations to carry a spare tire. They also ran on treaded race tyres as 'slicks' didn't really come about until the very late '60s (PD have never simulated vintage/classic/historic tyres even though most race series for historic cars use period-correct tyres, not modern racing slicks. A little bugbear of mine).
