After 3 months of ownership I finally cured the HDMI issues with a "Gefen-hdmi-detective-plus‏".

Expensive, but worth it not to have the GT5 screen dissappear mid-corner (futureshop "lessened my risk" by offering to buy it back if it didn't cure the issues - they have obviously sold these to PS3 owners before!).
If anyone reading this post tries the same fix make sure you attach the Gefen unit directly to the PS3 using the supplied Gefen "blue cable" for this connection (after programming the Gefen to your TV first).
I would have happily paid Sony another £100 to have had them make the PS3 hdmi output work reliably in the first place but this is the solution:tup:
