You can change your birth day. This is a one-time change. I did this yesterday, changed it to the 1st of June and I got my gift car today.

Far be it from me to know how the inner workings of Sony, but I have a PS+ account, which is tied to my CC, which is tied to my real birthday. Maybe it works fine indefinitely and it doesn't matter; maybe it works fine for now but will cause issues later; maybe I.......... just don't care that much.

I kept the birth year the same and just changed the day and month to something that's easy to recall. I won't be around my console during my actual bday so I couldn't resist.
