OP has been updated with a video from YouTube showing the Mustang's run in the 1986 Hardies Heroes Top 10 shootout at Bathurst.

Australia is woefully under represented in racing games...problem is most of them are not current. If they went from about the year 2000 and back 50+ years that's where all the gems are. Also we have a lot of cool tracks (with Bathurst being the pinnacle for me so that's great its already in GT) that should be considered.

We're under represented everywhere. Problem is we only have 21 million population and a lot of our cars are purely domestic. A Holden might have a lot of appeal to us Aussies or our Kiwi cousins over the pond but most of the world wouldn't have a clue what they are. Thanks to games being developed in Japan, they're always going to look in their own backyard first, hence over 50 Skylines & endless MX-5s.
We can only live in hope my friend.

Well taking into account that it wasn't raced in a lot of championships around the world in Group A form, unfortunately I wouldn't hold my breathe.
You may, or may not, be aware this car has been raced in the Heritage Touring Cars here in Australia for around the last 10 years. The driver was a gifted steerer by the name of Bill Pye. Bill was tragically killed a few days ago as the result of a plane crash. When he wasn't wearing his racing gear and strapped into the Mustang, he was a farmer & also raced a Camaro in the Touring Car Masters.
A great loss to the Motorsport community.

I knew the car for sure. I've been to the Muscle Car Masters on Father's Day weekend. 👍 The car was originally a Zakspeed Mustang that Johnson bought it off them.

No doubt RIP Bill Pye.
