Is this a common thing? I made myself a track on Mt. Aso, barely got off the start line and my PS3 froze. I had to hold down the power button to restart it. Went straight back into Course Maker, same environment, took one corner and BAM, froze again.

I'm gonna dive into GT Mode to check it's not just my entire game that's died, if not there's a few more bugs Kaz needs to jot down.

UPDATE: I went into GT Mode and my game still froze, but luckily I have uncovered the problem: my custom soundtrack. As soon as I disabled it the game ran perfectly. There's nothing particularly unusual about my music files, standard MP3s, so it's hard to pinpoint the exact issue. Feel free mods to alter the topic title for accuracy, Course Maker is not at fault.

You are probably not following AMARs advice on transferring your files.

They must be one of these SAMPLE rates, MP3 or WAV file (GT5 will only accept 48.0khz, 42.0khz and 20.05khz sample-rate files) (they can be any bitrates eg: 128kbps-320kbps for mp3 1000kbps+ for WAV.)

That's possibly the reason, I haven't checked these specific files' sample rates. It shouldn't freeze the game for non-supported rates though. I'm surprised they won't allow 44khz either since it's not exactly uncommon.
