I would like to know how the game should look, how it was intended to be seen. Is there a track or screen where I can tune my tv to look its best?
 
At the main menu, go to Options, then scroll down to Hardware, then scroll to the right. You should see multiple options concerning TV, HDTV, and Audio.

Ah yes. Been there many times. Those aren't the settings I'm looking for, however. I'm looking to tune the contrast/brightness/gamma of my TV with my TV's settings, not GT's. I was wondering if there was a screen that would show what GT5 was "intended" to look like. I can't think of another way to say it.

As it stands, I think it might be too dark, but then again, it might be the way the develepoers intended it. I wish there was an instructional control panel that guides you through what you should and should not see. "You should be able to distinguish between the steering wheel's blackness and your drivers gloves", thinkgs like that.
 
I calibrated my screen using some calibration bluray in the ps3. I noticed that video games ended up looking to dark like you mentioned. I used this pattern to adjust the brightness for video games.

BRIGHTNESS PATERN

Just view the picture in the ps3 picture viewer.

There are three vertical bars on either side of the middle greay scale. You should not be able to see the outer bars as those are below black.

Turn up the brightness until you see all three bars on either side. Then gradually lower brightness until the outer bar cannot be seen.

Just remember that these settings will make watching a movie in your ps3 really bright. Calibrating using this picture and calibrating using the actual disc end up with different results.

Wasn't expecting that the games would be darker than movies. Usually it's the other way around :s
 
If games are too dark compared to movies, you may have the RGB setting wrong. For many TVs the correct setting will be "limited" (for video black level of 16), not "full" (for computer black level of 0) but there are exceptions.
