I'm thinking - obviously - Grand Theft Auto. Car chases with amazing physics/models, hurling a yuppie out of his Lambo and fleeing, drive-bys in a Bugatti Veyron, fleeing the cops in a go kart, the possibilities are endless! xD
Gran Turismo and Harvest Moon. Take care of your farm for a while, woo your woman of choice (helped by your garage filed with Supercars, of course) and then drive, race or whatever. 👍

Interesting idea. I think I'd like to see the following:
Gran Turismo Sim City Edition: You have to build your city up from scratch but with an extra emphasis on the road system as you can construct your own circuits through your Metropolis and race expensive cars on them (possibly purchased with funds embezzled from the council's assets)
Gran Turismo Fallout: Race 1950's inspired nuclear-powered racers on circuits dotted around the apocalyptic wastelands. The circuits can still have all the abandoned vehicles, craters and Radscorpions to make racing a bit more interesting. Extra mods will include rocket-launchers, plasma guns and min-nukes!
Gran Turismo Sims: You have to manage a driver that seems to have a mind of it's own, that won't listen to instruction and displays all the calm and co-ordination of a fly with ADD. Oh, wait, that's already out. It's called B-Spec...

I'd settle for Gran Turismo and PS Home. I'd love nothing more than to have my current ride parked outside my house. I could then hop into it, and roar off to the track for some serious racing! 👍

Visual accuracy and physics and car selection from GT5. Oh, and sound of course.
The sandbox ability of Just Cause. Blow anything up, anywhere, however you want. GIGANTIC world.
Sometimes I wish that my car had a rocket launcher mounted to the roof. Especially during some of those challenges.
But seriously, GT5 + NASCAR The Game. Not so much for the NASCAR aspect but I would love to see realistic crashes in GT5. It's not that I want to wreck my car in the game but I would love to see a wreck happen if you happen to overdrive a corner and hit a wall at 200mph.

Im at it in GT5 everyday, on my downtime, Im playing Dragon Age Origins. It was something I missed at launch and I love Mass Effect, thought I'd give it a try on my downtime from GT5.
They should combine Forza and Gran Turismo, take the best bits from both games, put it in one and release it on PS3 and 360, would shut a LOT of people up.
