I was just browsing for some old GT3 videos, and one thing you'll notice is, how the graphics change. The car models sure are shiny, early in development. 
Also, check this intro for the demo, a little over half way through, there's an old white car that I believe didn't made it in the final version. Can anyone confirm what car that is. And here's another feature that didn't made it in the final version. Well, off to waste more time.
