If GT5 is going be a real Racing Simulator don't you think we should start seeing steering wheels with panels of different switchs for Ignition, Fuel pump and other random things Race cars have...

Would be a bit pricey, wouldn't it?

Some people have actually cut dashboards out of real cars and used them in their GT5 setup. It would be a lot of work, but I think it'd be cheaper than buying a $1000 instrument panel.
 
It will only cost that much if the community don't put their foot down and realise it probably costs around £20 to make a G25.

I like your idea though. maybe I could get a cheap wheel off ebay and re-wire the buttons. :P

I think that panel is pretty low tech looking. Most (non-Nascar) dashes have multiple use digital Stack-style units. A dash like that might suit a proper sim-racer, but on a more modern and road-car based Gran Turismo series most of those dials and switches would be redundant.
 
Then you wouldn't buy it would you.
although being usb it would work with other games like LFS and Rfactor.
