Got access to a car? Have a measure-up of the pedals in a real-life vehicle for a good starting point...

Yeah, I would base it off of a real car. I just did a quick measure of mine and the bottoms of the pedals (like the actual surface your foot goes on, not the whole assembly) is sitting 6" from the floor of my rig. As for the angle, mine are sitting at roughly 35 degrees, although this has to change depending on how high your seat is in relation to the pedals.

And one note about the 6", I play in socks, and that is too low for me to use with shoes on, so how they'll be used is something to consider as well. My rig's floor is also flat, but most cars would have a slightly angled floor which could affect the comfortable height of the pedals. Good luck!

If you want to be real slick you could make them adjustable. That really shouldn't be to hard. And don't base it off just any car, base it off one you're used to driving, or maybe even one with a comparable sear height

It is my plan to make them adjsutable. I just dont know how to make them height adjustable. This is the only part im kind of worried about.

In my cockpit, I reverse the pedal inside the plastic shrouding, then mounted it on my cockpit for a finish look

Hinge frame for the angle, and individual sliding rails with a spring loaded pin with holes for height. I would make each pedal adjustable individually. You could go one step more and have a threaded bolt with a lock nut to change the depth too.
