Can any one add to the list of cars that are no longer found in the dealerships but can be extracted if you know they exist?
Example: Toyota 2000GT

Some NASCARs are in the Recommended Cars section and not their dealerships.

Yes, the only ones hidden from the car lists by dealership are the NASCAR cars from 2010 and 2011, which as coryclifford said was in the recommended cars section. You can find the 2013 ones in their respective dealerships.
