How do I make Videos?

The title kinda says it all. If I had some replays I wanted to convert to MPEG (or any other common video format for that matter) ... what would I need. I just need a point in the right direction, Google has been unexpectedly unhelpful on this particular topic. Thanks.

second: use the search function... it's there for a reason, ya know?
