How to activate nitrous?

Normally by pressing & holding R1.
From the "My Home" screen if you press Start->Options then go to either wireless controller or steering controller, depending on whether you're using DS3 or a wheel, you can map all your controls from there.

You'll also find that the nitrous button does a few different things depending on the car.
With certain hybrid-enabled Vision Gran Turismo cars, the nitrous button increases the energy usage from the hybrid, whilst on the SRT Tomahawk Vision Gran Turismo series, the nitrous button activates DRS (similar to F1 cars).
