The first of my suggestions is:

REMOVE ALL THOSE GODDAMN SLOW CARS! No car with less than 120 hp should be in the game at all.

Also, I think manufacturers shouldn't have too many or too few cars

Mhh I like those <bleep> slow cars..

Some of my closest 2p races where in "slow" cars. A Civic or Trueno race is mandatory on our GT3 nights. Another classic is racing Minis or Demios.

Cars with less power are less forgiving when it comes to screw ups. You have to keep focused all the race, becuase if you make one ity bity mistake... Whamo! you lost :)
 
I agree with you on removing the stupidly slow cars from GT.

I disagree with removing all those slow cars. I reckon it makes a good break. Something a little different.
