When starting a race that begins from a stationary start, is it better to keep the pedal floored during the countdown--which would have the engine at the highest RPM but cause some wheelspin--or just start pressing it when START comes up? I'm mainly wondering for the 1-Lab Magic Driving Missions where timing is very critical.
 
The best example I can come up with here is the first couple of license tests. You know the 100m dash and the 1000m dash.

If you floor the car and get lots of wheel spin, you may not be able to pass the test.
But if you have the revs right to get as little wheel spin as possible you have a great chance at beating the time required.

Same would go for the 1 Lap Magic Missions. Try get as little wheel spin as possible, as this could give you the extra 1/2 a second you may need.
But you do need to start accelerating before you see 'GO'.
 
As Open Addict says, try to minimise wheelspin. How much throttle that takes depends on the car and driving aids. I drive without aids and with most sub 250hp RWD cars I can still floor it, but the TVR speed 12 needs about 20% throttle in 1st, only reaching full throttle in 4th or 5th.

For the driving missions and license tests, experiment by holding the throttle at say 50% during the countdown on the first attempt, then a bit more or less on the next until you find the best level for a fast getaway without spinning the wheels.
 
^ Also over reving actually causes loss of power over time. I found that giving about 1/4 throttle the right after is says start I'll floor it and if I get alot of wheel spin I'll let off a lil bit and get back on it.
