What I would like to do is only keep the fastest lap time for each car for the top gear track but I can only find how to delete all high scores. Is there a way to delete them individually?

I don't think there is. I also miss that feature from GT4.
What I have to do for now is to write them down.
(I have a book for GT4, Forza3, GT5Prologue and now GT5 is in there too.
I write down all kinds of useful info and times ).
