I've been playing GT3 forever now so here are 3 glitches I've seen over time.
1. Seattle Reverse - Two corners after the long straight (the one with the kink), there is a truck on the left that just pops out of nowhere! I have seen it every time but no one commented here so I brought it up.
2. Test Track Wheelie Trick - When doing the wheelie trick, once you get off the ground and the engine gets in the redline, lift off the throttle or use the handbrake. You still gain speed as always. Using the handbrake while in the air can make you spin out at 900 mph if you hit the wall right. If you do it in run & setting, check out the analyzer. If you spin tremendously without hitting the wall, the spins are shown as reducing parabolas (pretty cool if you are a geek like myself).
3. Complex String - Watch the replay, using the standard camera angles. At the point just before the right angle turns, look in the corner of the screen (between the tire wall and the "hard" wall) and there is a huge gap, but it's not quite there when you drive.
