When you say you can't make the Esprit 'not hop' up the hill at Seattle, I assume you mean that you can't stop her taking off on the yumps?
That being the case, the simple answer is that you can't prevent some air time going up that hill if you're doing any kind of competative speed. It's not really a problem as long as you get your initial line right and keep her straight. The one jump it's important to handle differently is the last one as this sets you up for the corner at the top - you should certainly throttle off before it and possibly even tap the brakes to drop the nose so that you retain control as you brake and steer for the corner.
