Anyone who knows Monza should know this section, but for those who don't, it's the section with the esses just before the back straight. I'm wondering how much over is considered cutting the corner as most fast cars are too wide to get more than two tires off without hitting the grass and that's not particularly advantageous.

2 wheels on track at all times!!

Yeah I've always gone by the two wheels rule. Different forms of motorsport may have different rules but that's what I would judge as fair.

Kinda like one foot in bounds for college ball ;)

Two wheels on the track at all times is the "right" way to do it, but in every online race I've ever seen outside of an organized series, people drive completely on the paved section, all 4 wheels and so do I to be competitive.

Yup. That's generally the accepted way of doing the Time Trials, too, from what I've seen.

You can actually cut it close enough that the inside of those two tires catches the inside edge of the armco, with the outer tires all the way out on the "grasscrete", and still be considered "on track".

From the McNish Le Mans lap videos he usually mentions going somewhat over the curbing on chicanes. The one I remember specifically was at Circuit de la Sarthe, the final chicanes before the start/finish line. So I honestly don't think there's anything remotely underhanded about it.

Pretty sure that any part of a tire touching the armco is generally a bad thing. ;)

But yeah, 2 on the gray is good -- although IRL they often do get up on the first part of the curbing at places like this and at Le Mans. It's probably ok if it doesn't look like somebody is trying to just barely nick the inside edge of the rumblestrip, but then every race I've seen online everybody just plows right through the green bit, penalties or no. I think the second chicane at Monza is probably the worst for that.

2 wheels on the rumblestrip and you'll be fine.

This. Two wheels on the run-off areas are acceptable and is practiced extensively in motorsports.
