as u might know, putting F1 or 787 Tires on a Mini or a Civic (or other compact car), makes the tires bulge out and look silly.

What are some better looking but grippy tires to use?

Actually, most F1 tyres are tiny. Try the tyres from the Polyphony 002 or F688/S.

Couldn't you just use the Super Soft tires that come with the car

Or isn't there a way to edit the grip or something?

The "grip" line isn't a tyre grip code, it governs the physical connection between suspension and unsprung mass. Set the lines to 1 and have a drive to see what I mean :D

Other than F1 T5s - which are small and very, very grippy, you can try Lupo Cup T8s, Beetle Cup T8s, MR-S JGTC T8s, Spoon S2000 Race Car T8s - and so on.

the F688 tires are still too big.

Im gonna try some Stock WRX tires. I think even though they'll have less grip than F1 tires, i can just change the downforce to make the car grippy

Now there's a question. No idea. I tend to stick with the non "II"ed tyres...

Depending on which version of MK's U are using, there will either be T8s and T8.5s, or T8s and T8 IIs. I think the the general consensous(sp) is that the T8.5s/T8IIs are slightly grippier, but also wear slightly faster.

That's a nice piece of info

Any reason why they're on the editor and not in the game??

Or are they in the game??

As far as I know they are not available in the game. As to why they are on the disc, but not in the game, I don't know, perhaps they were originally intended to be in the game, but was later changed, and it was easier to just leave them on the disc than to rewrite. At one time it was speculated that they may have been used by the AI cars, but that thought was shot down once we were able to open replays with MK's.
