I saw an interior view a while back reguarding GT:HD or GT5, and thought this time they would have it? No? Or just not for HD?

The car interiors are being modelled, presumably to allow for a proper in car view in GT5. That's as much info as there is at this stage. There's a good year or two before the game comes out yet, plenty of time to answer your questions.
