Stoppie Distance (mini-game) - 3,444 feet of stopping distance
Stoppie Time (mini-game) - 250 seconds (accomplished simultaneous with "Stoppie Distance" record)
RC (Radio Control) Baron Race (mini-game) - 2 minutes and 10 seconds (2:10)
RC Bandit Race (mini-game) - 2 minutes and 17 seconds (2:17)
RC Raider Pickup (mini-game) - 4 minutes and 25 seconds (4:25)
Keepie-Uppy Beach Ball (mini-game) - 67 bounces
All records are held by the same guy, Mike Morrow, who also holds the record for completing GTA3 in one sitting, in 2 hours and 47 minutes
Edited to add that it appears that he completed the main storyline missions in that time, not that he got 100% in that time.
