One opponent

I am trying to create some photos where you are only against one opponent (to make it look like a car chase of sorts) but so far the only track that I've managed to find that enables you to do this is Costa Di Amalfi. Are there any ways to set the number of opponants, or any other tracks, other than rally courses, where this is possible?

All the races in "Special Condition Hall" are against one car, the downside is that you can´t chose your oponent :indiff:
 
Or you can just pick sequences in races where there are only two cars and get pictures like this

 
Just whack a car off of the road, and start a 'car chase' with him while everyone else is at the front.
 
If you can get the style like Gone in 60 secs, then that can be a classic most likey lol.
