Run a race which includes more than 1 car. Save the replay, Then, outside of simulation mode, go to replay theater. Play your saved replay. Press select at any given moment and you will be given the photo screen. You can also fast forward through the replay using L3 to get the the portion of the replay you wish. I have not found a way to place multiple cars where you want them like in Photo Travel. But I have read an excellent thread on how to take multiple shots using the same camera and settings, then merge the photos together in photoshop. I hope this helps.
