I hate to make a necro post but i think this is valuable information. You guys can easily use wood or plastic and drill the holes accordingly to lift up the g27 shifter. But considering that i found this looking for similar information i figured id write up my findings after doing some research.
First off, i own a g27 and a fanatec GT3 RS v2. I highly recommend you invest in either buying the whole kit, or buying the parts piece by piece. But i know the GT3 RS series and the GT2 series are much better steering wheels offering much better configurations, settings, and all that good stuff. The wheels are much better compared to the g27 because the g27 is using gears while the fanatec wheels use belts which are setup to slip so it feels a lot smoother and more realistic. If you look up chili coke on google or youtube he will link you to some modded parts he sells so you can actually use a real steering wheel in place of the g27 one.
The main reason im recommending this is because you can have their shifter setup next to the wheel, almost like rally style but with a regular and sequential shifter. You can even easily mod the sequential shifter to work as an E brake. Google is your friend : )
As for sticking with the g27 You dont necessarily need to drill anything to raise it up just find something to put in between the screws, the screws are long enough to allow for some extra height, just dont go to crazy so that theres not enough screw holding the shifter to the mount.
And if none of that works for you, if you know how to use a drill you could easily mount the part that the mount slides into thats screwed under the seat on the outside wall of the play seat instead of the inside, and you could get a bit of height with that too.
Here are just a few of my favorite links for mods and things you can buy to tweak your g27 and fanatec setups.

One of my favorite affordable and idiot proof mod for customizing your pedal layout on the g27 pedals. (SRS g257/g27 pedal mod)
The following link is a video of the mod in the last link.

Heres where they sell those parts for extending the pedals along with tons of other cool stuff.
http://fanatec.com/ or fanatec.de will also work.
And theres a link to the fanatec products, FYI you can use your g27 pedals on their wheels by buying an extremely cheap adapter that they sell. Too bad you cant use the g27 shifter from what ive seen.
If you use google you can find tons of different mods for e brakes for both the g27 and fanatec setups.
Theres one more link i wanted to provide for a cool plastic and also wood spacer mod that is being sold, which will give you even more customization even with the pedal extension mod, and the mods from the link below.
And heres one last cool link to check out. (PTR mod for g25 n g27 pedals)
