Still images: Use a digital camera.
Videos: You will need something on your PC which can accept video input from external sources - a capture card or another device (Belkin make a nice product called the "Belkin USB 2.0 DVD Creator" which does the trick nicely for £48) - and software capable of recording, which should come with whatever device you get. You will then need to hook the PS2's video output to the video capturing device, and record using the software.
