Why use selective coloring? Why?

Because it looks good, actually in these photos I think it look great. It's not as noticeable as it could be because the backdrop is pretty much grey and black anyway.
If the back drops were vibrant, with interesting colours and stuff I'd understand your criticism as it would take something away from the shot. As it stands I don't, what's wrong with it in these photos in particular?

Because, as you said, the backdrops are mostly grey anyhow, and they should have some slight color. Instead, it is pure grey scale generally minus red and blue bits.

It just cheapens the feel of the photos while adding nothing.

I still don't understand the angst toward selective coloring.

Because it is a crutch that photographers often fall back on when they've failed to properly isolate the subject or put emphasis on the correct part.
