what car is your fastest
i used an R92CP and kicked butt

Used a stock Minolta with almost 800 km on r2/r3 tyres and had no problems.
Minolta is the prize car from El Capitan endurance race, but I guess you can use a less powerful car... it was really easy.

Looks like the AI uses R1 (super hard) tyres, but the races aren't that long so if you use a softer tyre 💡

I tried with the minolta on infineon but kept spinning out on the left hand sweeper. My r92cp was the overall wineer but kept spinning out on sharp turns.

Cars like this can almost always win against the AI stock. Occasionally they need a little power boost, but try to concentrate on your driving (ie keeping it on the island) more than the tuning: you'll benefit a whole heap more by learning the right lines and braking points than by tuning the engine to high heaven and bumping from barrier to barrier.
