rewind and fast forward in replays

When watching a replay, its seems its not possible to rewind or fast-forward the playback. The 'rewind' button (<<) seems to just do the same as the restart (|<) button, which is jump right back to the start.

I havn't found any method to rewind / fastforward yet, has anyone else?

You can't rewind or fast-forward in GT5 or 6. You can skip forward or back though. For short tracks that will probably be once per lap. Generally though the points where you skip to are where the timing splits are taken from.
