I would recommend changing the name of this request to "Seaside Street Galaxy" (The name of this course from Daytona USA: Championship Circuit Edition) and update the OP with gameplay videos and a track map... But voted.

I appreciate the advice and thanks for finding a nice track map, I was literally looking for these whilst updating the title just now(I found a thumbnail sized map and another one of a map scan that was heavily watermarked)
