Hey colepepper. I took part in a 6 race mini-tournament last Saturday and have a tuning setup that worked well for me (placed 1st in 5 and 2nd in 1) that you might like to give a try. The tournament disallowed the use of an LSD, so the only real settings changed are all suspension related. You might get better results with an LSD installed and more tweaking, but for what it's worth this might still be of use to you.
First, the setup included the following upgrades (as permitted for our tournament):
- Oil change, engine overhaul and body repair in GT auto.
- Rigidity Improvement
- Supercharger (brings power up to around 199BHP, 595PP)
- 6 speed close-ratio transmission
- Twin-plate clutch, Semi-Racing flywheel and Carbon propeller shaft
- Fully customisable suspension
- Soft sports tyres
The suspension settings I used are as follows:
Suspension
- Ride height: -10 front, -4 rear
- Spring rate: 10.0 front, 7.0 rear
- Dampers (Extension and Compression) all set to: 4
- Anti-roll bars: 6 front, 3 rear
Wheel Alignment
- Camber angle: 0.7 front, 0.4 rear
- Toe angle: -0.07 front, 0.25 rear
With these settings, the car still had a tendency to slide under full throttle and large angles of steering, so there's a significant amount of learning involved to get the most out of the car. However, I found these settings made the driving experience a lot more solid, and gave me the confidence to push the car harder on bends, without worrying about losing control. The great thing about the Caterham is that (at least with these settings), countersteering a slide was very easy to do. Like I said, the car would have a tendency to slide, but you would still feel in control.
(Not sure if these would be any help, but here are the first two race replays:

I'm in the yellow one, though the camera isn't always focused on me as I was trying to give a decent overview of the race.)
