Starting a race with paddle shifts

Hi guys, Please help if you can. I have just changed from PS to PC & am going through the career mode on AC. Whenever I try to start a race with a car with a sequential gearbox (Mercedes or McLaren 650S) , I can only leave the line by holding the car in gear with full foot brake until the lights go out & then lifting my foot off the brake, so starting with virtually no revs. The handbrake will not hold the car, resulting in me getting a penalty & I can’t use the clutch (I have checked & I do not have the auto clutch on. How can I make a proper start?
 
Foot on brake, then foot on gas, when lights go out release brake.
 
Thanks for your reply, that’s what I’ve been doing, but it doesn’t seem very technical
 
That's how actually works in real life with cars equipped with paddle shifters, in 1st gear the power isn't transferred until the brake is released, so it doesn't damage anything, like it'd with a manual car. Check few YT video eg: on McLaren drag launches.
